Multiple Payment cassettes in WCS 6?

I have a new project starting up that will use WCS 6 and they want to have one payment manager instance but allow for processing through two separate banks (not sure if they will both be Paymentech or not, but at least one will be Paymentech).

I've never had to do this before. Is it possible to have one Payment manager instance with mutliple copies of the same cassette (or whatever the new v6 term is)?

If so, is there any documentation for doing this?
